As it was Pancake Tuesday last week I had to have pancakes for dinner. I’m trying to eat more plant based so decided to try a vegan pancake recipe I found online.. it didn’t disappoint!
Ingredients
♡ 1 banana
♡ 40g Oats
♡ Cinnamon to taste
♡ 50ml plant based milk of choice (I used unsweetened almond)
Method
♡ Add the banana, oats, milk & shake of cinnamon to a mixer (I used my Nutribullet) & blend until smooth
♡ Heat a non stick pan and spray Fry Light
♡ Pour the batter into the centre of the pan and it should naturally spread into a round shape
♡ Wait for bubbles to appear in the batter before flipping over to cook the other side
♡ Remove pancake & repeat until you have no batter left

The ingredients made 3 small pancakes and I split the batter for the 4th into 2 so I had 2 mini pancakes to top off the stack. I stacked the pancakes layering fresh strawberries, blueberries and pomegranate seeds between them then topped off the stack with a drizzle of MyProtein Butterscotch Sugar-Free Syrup (which is vegan – yay!)
The recipe is super quick and easy and the pancakes tasted delicious – especially with the added sweet toppings.
