Banana bread, take 1… Since I’ve started doing a bit of baking I was super excited to make a banana bread. I can remember mum making banana bread when I was a child and I have always absolutely loved it. I found the recipe I used online, and rustled it up late in the evening… I even had to swap out baking powder for bicarbonate of soda (Google said this was a thing) as I was unprepared lol!
The recipe advised a bake time of around 30 mins but my skewer was still very wet at this time so I would say my bread was in around 40 minutes. It isn’t perfect and there is room for improvement but I am learning with every bake and having great fun too.

Brilliant Banana Bread
Ingredients
- 140 g Butter
- 140 g Caster Sugar
- 2 Large Eggs
- 140 g Self-Raising Flour
- 1 tsp Baking Powder
- 2 Ripe Bananas
- Dried Banana Chips to decorate
Instructions
- Preheat your oven to 190/160 fan & grease a 2lb loaf tin
- Cream the butter and caster sugar until light and fluffy
- Slowly add 2 large beaten eggs with a little of the 140g flour
- Fold in the remaining flour, baking powder and mashed bananas
- Pour mixture into the tin and bake for approx 35 mins, until a skewer comes out clean
- Cool in the tin for 10 minutes before removing to rack to cool
